I am born from a mom who came directly from Tunis to Paris at age 20 and a father whose family was from Czernowitz, the city of Paul Celan. I was in charge of the International Business Development for leading cosmetic companies and was running the world.
Twin pregnancy is a serious matter.
I had to change my lifestyle. While I was pregnant with my twins I knew that I had to be extra careful. My grandmother lost her twins and afterwards died from diabetes.
My pregnancy was therefore at risk of gestational diabetes. I was carrying not one but two babies.
I was aware that with my genetic background, eating refined sugar was not an option. My only problem was my dark chocolate cravings
It started to become harder and harder to resist the temptations.
The dark chocolate cravings were stronger and stronger.
My mother taught me that when a woman is pregnant she must eat what she has been craving for.
I listened to her and was asking my husband to please try and find me a great raw dark chocolate that would be free of any refined and chemical sugar or sweetener, dairy, GMO... Nothing worked.
The taste was not there or it was loaded with bad ingredients. I could not satisfy myself with anything. I am in between paleo, vegan and ketogenic. I hate sweet but love decadent nourishing desserts. And I am so nuts about raw dark chocolate.
I started to think about how my Grandmother from my Mom’s side used to put her almonds inside water for a few hours before we would eat them.
Also, all her pastries were made from Pistachios, Almonds, Hazelnuts, Pine nuts. Those sprouted nuts were what I was craving.
I also started to think about the beautiful sprouted grains and fermented food that my Grand ma from my father’s side was making.
It all made sense.
I realized that for a reason that I do not know, whereas I left France for a few years and was even further from Tunis or Czernowitz, that the legacy of the women in my family, who came from opposite worlds came back to me and guided me through the process of feeding myself and my two beautiful little babies.
So making nourishing decadent paleo, vegan and ketogenic raw dark chocolate truffles became my duty.
I made my first batch of raw dark chocolate truffles (it took me two weeks to research and three days to make them) and guarded each one of them very carefully. I did not want to share. They were delicious. They were nourishing. They were mine.
One of my best friends came one day and asked me to try. I refused. She did not take no for an answer and tried one anyway. Her reaction was phenomenal. She said to me: "Stop all your projects. This is what you need to do". And that's how HNINA was created.
I had to wait a little bit because I injured myself when my babies were three months old.
This was good in a way because I was able to breastfeed them for a long time and had plenty of "down" time to think of other recipes for delicious raw dark chocolate truffles with sprouted nuts and sprouted seeds loaded with nutrients. I wish I would have had my HNINA's raw dark chocolates with sprouted nuts and seeds during that time. Unfortunately I could not really walk or stand for quite a while so I could not make any.
